Easy to Make Spinach Nuggets {Recipe}

This is another one of our favorite recipes to make at home. Spinach nuggets are really easy for my toddler to eat (finger food) and he loves them, plus spinach has a high nutritional value and is extremely rich in antioxidants.
Easy to Make Spinach Nuggets
Yield: 4
Ingredients:
1 package frozen spinach (cooked, drained, and chopped) or 2 cups of fresh spinach
1 cup bread crumbs
1 ½ cups shredded cheddar cheese
3 eggs
Directions:
Heat your oven to 350F
Coat a baking sheet with olive oil.
Combine all ingredients and mix well. You can add garlic powder, pepper and basil if you wish.
Shape the mixture into nuggets and place on the baking tray.
Bake for 25 minutes (turn nuggets over after the first 15 minutes).

Yes it came out great! We all loved it, I served them with quinoa and mixed veggies. I had to hand mixed it for a little longer so that the fresh spinach leaves would wilt (sp?) a little and make it easier to form the nuggets… next time I’ll try pre cooking them a bit. Thanks for sharing!

Hi, you can use 2 cups of fresh spinach if not using the frozen spinach.
I’ve never thought about making nuggets from spinach before, although they remind me of the mini savory pancakes that i sometime make (with eggplants, kimchi, zucchini, etc) so maybe I’m not so far off on your idea/recipe!

When I read the recipe title, I was skeptical, but now that I’ve read the recipe and saw the pics, they look wonderful! I’m going to make these and I’m going to send my daughter the recipe, too, she has a difficult time getting her 4 year old to eat veggies. I’m sure he’d love this, though!

Sounds yummy! And another great way to serve spinach. Goat cheese would be a great ingredient instead of the yellow cheese but that is personal preference, of course.

This sounds yummy! When I get off this gluten free detox diet I am on, I will have to try them, or even better, I will try to find a substitution for the bread crumbs…… hmmmm? Any ideas?

Yum! I think this would be great for the kidlet and the rest of the family! It’s a bit of a struggle to get her to eat veggies now but she LOVES anything breaded and with cheese!
