Apple and Avocado Chicken Salad

Although known for being high in fat, avocado holds nutritional value that can be a healthy addition to even the most guilty of pleasures. If you are looking for healthy alternatives this summer, avocados can lower cholesterol, aid weight loss and enrich a diet with potassium and vitamins C and E.

Apple and Avocado Chicken Salad

Ingredients

  • to taste Oil
  • to taste Salt and pepper
  • 1/2 cup Water
  • 1 cup Buttermilk
  • 1 Garlic clove
  • 3 Tbsp Fresh lemon juice
  • 1/4 cup Parsley
  • 2 Avocados
  • to taste Radishes (optional)
  • 4 slices Italian bread
  • 1 Avocado
  • 1 Granny smith apple
  • 1 Shallot
  • 2 Boneless, skinless chicken breasts

Instructions

1) Pat dry and season generously the boneless skinless chicken breasts (2).

2) In a pan with some hot oil (to taste), pan fry the chicken until cooked. Turn over only when one side has browned. If there is no blood in the juice then the chicken is cooked.

3) Let the chicken cool enough to shred into a large bowl

4) Finely mince the shallot (1).

5 )Dice the granny smith apple (1).

6) Core and dice the avocado (1) and transfer to the bowl of shredded chicken. Core and dice the remaining avocados (2) and add to a blender

7) Roughly chop the parsley (1/4 cup) and add to the blender.

8) Finely mince the garlic clove (1) with some salt then add to the blender. The salt helps make a fine garlic paste. Use your knife to scrape down and chop to make the paste.

9) In the blender add fresh lemon juice (3 Tbsp), buttermilk (1 cup), water (1/2 cup) and some salt and pepper (to taste). Fold some dressing with the chicken. Save leftover dressing in the fridge for up to 3 days and use as a dipping sauce.

10) If using radishes (to taste), slice then thinly with a madeline.

11) Toast Italian bread (4 slices) and top with chicken and a bit of radish.
