Beef and Asparagus on Lettuce Leaves {Recipe}

This elegant looking snack is easy to prepare, low in carbs and packed with healthy protein and greens. You can dip the individual beef and asparagus spears in the sauce or wrap them all up in the lettuce and gobble it down. Delicious finger food snack for little ones too!

Beef and Asparagus on Lettuce Leaves with Thai Chili and Ginger Dipping Sauce

Ingredients

  • 1 lbs flank steak, cut into thin strips
  • 2 tablespoons vegetable oil.
  • 4 heads of asparagus, cut into 2cm pieces
  • 12 baby romaine or butter lettuce leaves
  • 1 teaspoon light soy sauce
  • 1 tablespoon Thai fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon Billy Bee honey
  • 4 tablespoons Thai chili and ginger dipping sauce

Instructions

1. Marinate the steak in the soy sauce, fish sauce, and honey for at least one hour, and up to 24.

2. Blanch the pieces of asparagus in a pot of salted boiling water for one minute. Refresh in ice water, drain, and leave on a paper towel.

3. Remove the steak pieces from the marinade. Heat the oil in a frying pan and sear the steak pieces, approximately one minute on each side.

4. Place a few pieces of asparagus into a lettuce leaf. Top with a few pieces of steak. Serve with Thai chili and ginger dipping sauce
