Easy and Delicious Coconut Curry

Yield: 4-6 people

Ingredients

  • 1 teaspoon coconut oil
  • 1/2 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon of curry powder
  • 1 can coconut milk
  • 1 tablespoon of soy sauce
  • 1 tablespoon pure maple syrup
  • 2 small purple yams or sweet potatoes , chopped
  • 1 small zucchini, chopped
  • 2 carrots, chopped
  • 1/2 a head of broccoli, chopped
  • 1 cup quinoa or rice, rinsed
  • 2 cups water

Instructions

  1. Cook the quinoa or rice following packaging instructions.
  2. Melt the cocunut oil in a salute pan over medium heat, add onions and garlic and salute until fragrant for about 5 minutes.
  3. Add the coconut milk, curry powder, soya sauce and maple syrup and combine, bring to a boil.
  4. Bring the sauce to a simmer and add the yam or sweet potatoes, cover the pan and steam in the sauce for about 10 minutes.
  5. Add the rest of the vegetables, coat them with the sauce, cover and steam until fork-tender.
  6. Serve over quinoa or rice and enjoy!
