Who doesn’t love muffins? Here’s a fun way to “disguise” a healthy omelet packed with veggies and protein. Sure to be a hit with the whole family.

My boys both love these and I love the fact that they get to eat some eggs filled with good stuff and veggies like spinach!

Egg Omelet Muffins

Ingredients

  • 6 eggs (beaten)
  • 1/2 tsp olive oil
  • 1/2 tsp baking powder
  • 1/2 cup red pepper (diced)
  • 1/2 cup of mushrooms (diced)
  • 1/4 cup diced onions
  • 8 cherry tomatoes (diced)
  • handful of fresh, rinsed spinach (optional)
  • 1 cup shredded cheese (blend of cheddar and mozzarella)

Instructions

preheat oven to 375F

1. sauté mushrooms, onions, and red peppers in a frying pan until soft then set aside

2. spray a six cups of a muffin pan with cooking oil

3. put a bit of the sauté mixture in each cup along with some diced tomato and spinach and then top with shredded cheese.

4. pour some of the egg mixture into each cup until it reaches the brim.

5. cook in the oven for 20-25 minutes

6. let cool for five minutes and serve right away
