Mouthwatering 100% Whole Grain Chocolate Banana Muffins that will have your taste buds dancing with delight.

Ingredients

  • 1 ½ cups 100% whole grain flour
  • ¼ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup white sugar
  • ½ cup avocado oil
  • ¼ cup milk
  • 1 egg
  • 1 teaspoon vanilla extract
  • 4 ripe bananas, mashed
  • ¾ semisweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
  1. In a large mixing bowl, combine the dry ingredients: flour, cocoa, baking powder, baking soda, sugar, and salt.
  2. In another bowl, mix together the wet ingredients: oil, milk, egg, and vanilla extract. Stir until well combined. Fold in the mashed bananas and chocolate chips.
  3. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay‘
  4. Fill each muffin cup about 3/4 full with the batter.
  1. Bake in the preheated oven for 20- 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean with a few moist crumbs attached.
  2. Remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
