Cobb Salad Recipe
Back to school, back to school! It’s a busy time for kids and parents alike, and that’s without worrying about mealtime. While it can be tempting to dip into last year’s repertoire, why not try fuelling the family with some fresh new dishes?

Cobb Salad Recipe

Ingredients:

½ head of Romaine lettuce
½ Avocado
1 ½ ounces Blue cheese
½ Roma Tomato diced
2 ounces Bacon Chopped
1 hard boiled egg
Ranch dressing

Directions:

1) Place romaine on a large plate and add avocado, tomato, blue cheese, bacon and egg.
2) Drizzle it with ranch dressing and make a new friend!

Paul’s Tip: This is stolen from my mother-in-law: keep left over avocado in a sealed container with some cut up red onion and it doesn’t brown!

    THIS is what I want for MY lunch today. I’d have to add more avocado, and a different cheese as I’m not a fan of blue cheese.

    I’m pretty certain my 2yr old would love this too! Unlike my first born, she loves trying new foods.

    I am trying to feed my family a really healthy diet this year and I find one of the best way to eat vegetables is to try a variety of salads. I have eaten Cobb Salad before but I do not remember putting or having avocado in it. This is the salad I hope to have as one of my staples this year. Thank you, again, for this recipe.

    I like everything but the avocado because for some reason I don’t like the texture of the avocado. I like the egg and blue cheese the most but I’d probably add cottage cheese in there.

    This Cobb Salad seems fairly easy to make. One could add cut up chicken nor beef to it as well. Thank you for this recipe.

    I would totally change out the cheese and give options for dressing but I have to ask you if your kids will actually eat the blue cheese???
