This super easy to make Beef Egg Roll Bowl recipe is a must try! A total hit with the entire family! This recipe yields 8 servings, so we have it for dinner and have enough left overs for lunch or dinner next day. Easy one-pot meal with extra left-overs.

Ingredients

  • 1 tsp olive oil
  • 450 gr lean ground beef
  • 2 garlic cloves, minced
  • 1 tblsp grated fresh ginger
  • 1/4 cup soy sauce or substitute coconut aminos
  • 1 tblsp rice vinegar
  • 1/2 tsp sesame oil
  • 2 14oz bag of coleslaw mix
  • Chopped scallions for garnish

Instructions

    1. In a large skillet or pot, heat olive oil over medium heat, add the ground beef and cook until browned.
    2. Add the garlic and ginger. Sautee for 1 or 2 minutes or until fragrant.
    3. Add the soy sauce, rice vinegar, and sesame oil.
    4. Add coleslaw mix and stir well to mix, heat until slightly wilted, for about 5 minutes.
    5. Serve right away over rice or noodles, or on its own for a low carb option. Garnish with chopped scallions.
