Citrus and Beet Salad {Recipe}

A recent Shoppers Drug Mart Flu Poll found that 51% of Canadians believe the best way to protect yourself from the flu is by eating well. I think boosting your immune system naturally is the way to go when trying to prevent disease as well.

Check out the following recipe with lots of yummy and healthy ingredients. Low fat and full of vitamin C, this colourful salad can be made year-round.

Super easy to make and full of goodness, this one was a hit with the entire family.

Citrus and Beet Salad {Recipe}

Yield: 4 servings

Citrus and Beet Salad

Citrus and Beet Salad
Prep Time 15 minutes
Total Time 15 minutes

Ingredients

  • 1 small red ruby grapefruit, peeled
  • 1 PC Organics Navel Oranges, peeled
  • 16 no name Sliced Beets, from the can, drained
  • 4 cups (1 L) PC Organics Baby Spinach
  • 1/4 cup (50 mL) PC Blue Menu Dressing - Lemon Poppy Seed
  • Thinly sliced red onion (optional)

Instructions

1. Holding grapefruit on its side on cutting board, cut into eight slices. Repeat with orange,cutting into eight thin slices. Using 2 slices orange, 2 slices grapefruit and 4 slices of beets for each of four salad plates, arrange slices on plates in large circle, slightly overlapping them and alternating beets with citrus.

2. Gently toss spinach with 2 tbsp (25 mL) of the dressing. Mound one-quarter onto centre of each plate on top of beets and citrus. Drizzle remaining 2 tbsp (25 mL) dressing over the fruit. Serve immediately, garnished with red onion if desired.

Chef's Tip:

*Substitute PC Organics Baby Arugula for spinach, if you like.

*Scatter pomegranate seeds around rims of plates before serving, if desired.

    This is really different from the usual salads I make- I’m intrigued. I don’t use beets enough- hardly ever, in fact. Thank you- I’ve added this to my ‘to try’ list!

    My husband can’t have grapefruit but I would imagine that would only make it better… although I honestly don’t know if I like beets, lol. I love poppyseed dressing, oranges and spinach!

    Nice new spring salad, I would of never though of adding beets.
