I love making one-pot recipes because I don’t have to clean as many pots at the end of the day. And these days, I take all the help I can get when it comes to cleaning dishes.
I usually double up on this recipe because the leftovers are also delicious the next day. I highly recommend that you do, if you are making it as well. Perfect comfort food dish.
The Monterey Jack with Jalapeno cheese also gives it a nice little spicy kick but you can go with just Cheddar if that is all you have.
And one big plus about this recipe, the kids LOVE it too. They request it all the time!
I love yellow onions. Here I made double the recipe to have leftovers for the next day.
