I have bruised, ripe bananas by the end of the week, almost every week, and an easy solution is to make some delicious banana bread to enjoy. 

Because we make it so often, I’ve had a chance to experiment with multiple recipes, adding and changing ingredients and trying to perfect the recipe.

We also add chocolate chips because we love chocolate, but those are always optional.

Perfected this recipe after trying it many many times, we love banana bread in this house! This banana bread turns out super soft, moist, and full of flavour. A must!

Ingredients

  • 3 - 4 Large Ripe Bananas
  • 2 Large Eggs
  • ½ Cup of Butter
  • 1 tsp Vanilla Extract
  • 2 Cups All-Purpose Flour
  • 1 tsp of Baking Soda
  • 1 Cup of Granulated Sugar
  • ½ tsp of salt
  • ½ tsp of cinnamon
  • ½ cup dark chocolate chips (optional)

Instructions

    1. Preheat your oven to 350 degrees.
    2. Lightly grease a loaf pan with butter or cooking spray and set aside.
    3. Microwave butter until melted (around 50-60 sec).
    4. In a medium bowl mash bananas with a fork, add melted butter and mix well.
    5. Add eggs, and vanilla extract and continue to mix well.
    6. Use a second medium bowl to whisk together the dry ingredients: flour, baking soda, sugar, salt and cinnamon. Mix well.
    7. Add the dry ingredients to the bowl with the wet ingredients and mix until combined.
    8. Add chocolate chips and mix (optional)
    9. Pour the mixture into the greased loaf pan and bake for about 50 - 55 minutes, or until a toothpick inserted into the centre of the loaf comes out clean.
    10. ENJOY
This recipe is super easy to make, and you don’t need to use a fancy mixer.

My youngest loves helping in the kitchen, and he often makes the banana bread with me. So easy and fun! 

Once the banana bread is ready, you can let it cool in the pan for a few minutes. Then, remove it from the pan and let it cool on a cooling rack completely before serving. The wait is always the most challenging part of our home!

Banana bread will keep at room temperature for up to 4 days if wrapped well.

You can also refrigerate the loaf for up to 5 days, or even freeze it.
