I love making meals for my almost 9 month old.  I get really excited when I find a particular recipe that he really enjoyed and I usually share it with my other mommy friends.  Every other week I will share my favorite healthy recipe of the day with all of you as well.

This week’s recipe is: Baked Butternut Squash

Butternut Squash is delicious and nutritious plus it contains tons of Vitamin A and Folate, just want you want when feeding your baby a healthy diet! 

Ingredients: 

1 peeled butternut squash (diced into small cubes) 

1 small leek, chopped 
(3/4 cup) Cheddar cheese (grated)
(1/4 cup) flour
(1 cup) half and half cream
a pinch of ground ginger
a pinch of ground black pepper

Directions:
– Pre-heat the oven to 345 F and grease a baking dish 
– Mix the cream, ginger and pepper in a bowl and put aside
– Cover the squash with the flour
– Put half of the squash in the baking dish and add the leeks and half of the cheese on top (first layer)
-Add the remaining squash and cheese on top (second layer)
-Pour the mixed cream, ginger and pepper on top of everything (final layer)
-Bake for about 45 minutes to one hour (after it is done let it stand for 5-10 minutes)

Now you can chop/blend it to achieve the desired texture and serve 🙂  
What I love about this recipe is that it is super tasty and we can have it for dinner as well!
