Beef and Asparagus on Lettuce Leaves {Recipe}
This elegant looking snack is easy to prepare, low in carbs and packed with healthy protein and greens. You can dip the individual beef and asparagus spears in the sauce or wrap them all up in the lettuce and gobble it down. Delicious finger food snack for little ones too!
Beef and Asparagus on Lettuce Leaves
1. Marinate the steak in the soy sauce, fish sauce, and honey for at least one hour, and up to 24. 2. Blanch the pieces of asparagus in a pot of salted boiling water for one minute. Refresh in ice water, drain, and leave on a paper towel. 3. Remove the steak pieces from the marinade. Heat the oil in a frying pan and sear the steak pieces, approximately one minute on each side. 4. Place a few pieces of asparagus into a lettuce leaf. Top with a few pieces of steak. Being diabetic, I’m always on the lookout for delicious low carb snacks and meals and this is perfect! I love asparagus and there’s also great protein here, so it’s a winner for sure!

I love my asparagus, though I must admit it took me a while to get used to it being green! In Europe it’s mostly the white variety. This is wonderfully displayed, if it tastes half as good as it looks this is a winner 🙂

I’m not a fan of fish but when I looked up the fish sauce they said to use it in place of soy sauce or salt, so I’m going the other direction and will try this with soy sauce, lol. It looks so good! I’d love the Chilli and Ginger dipping sauce!
