Ingredients

  • 1/2 cup of milk
  • 1/3 cup coconut oil
  • 1 egg
  • 2 cups all-purpose flour
  • 1/2 cup white sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup of semi-sweet chocolate chips
  • 1 tbsp shredded coconut

Instructions

  1. Preheat oven to 400 degrees F.
  2. Line a 12-cup muffin tray with silicon or paper liners.
  3. Combine milk, coconut oil, and the egg in a small bowl until mixed.
  4. Combine flour, sugar, baking powder, and salt together in a large bowl, and mix well.
  5. Make a well in the centre of the dry mix, pour the wet mixture into the well and stir until the batter is combined.
  6. Fold in chocolate chips and shredded coconut.
  7. Spoon batter into muffin liners, 2/3 full.
  8. Bake for 20-25 minutes until the top is golden and crispy.
  9. Transfer to a wire rack, serve warm with ice-cream or cool them completely.
