This easy and delicious Sweet Potato, Pepper and Chicken Traybake is full of flavour, it is all cooked in one tray so less cleaning to deal with, and pretty healthy because it is filled with good vegetables! This one is a must try!

Ingredients

  • 2 medium size sweet potatoes cut into 1" cubes (skin on)
  • 3 bell peppers chopped into medium-sized pieces – (1 yellow, 1 orange, and 1 red)
  • 3 tablespoons olive oil
  • 4 teaspoons smoked paprika
  • 8 small sprigs of fresh thyme
  • Salt and pepper to taste
  • 4 skinless chicken breasts

Instructions

    1. Marinate chicken the night before, or a few hours before cooking. Place 1 tbs of olive oil, and 2 tsps of smoked paprika, salt and pepper to taste in a glass container, add the chicken to the bowl and coat them well. Cover and let it sit in the fridge.
    2. Preheat your oven to 425F.
    3. Place sweet potatoes and peppers in your roasting sheet pan. Makes ure your pan is big enough to allow al v vegetables to cook in a single layer with a bit of space in between.
    4. Drizzle vegetables with 2 tsps of olive oil, add smoke paprika and thyme springs, mix well to coat all vegetables with seasoning.
    5. Place in the oven and roast for 10 minutes.
    6. After the 10 minutes, remove the pan from the oven, flip the vegetables with a spatula, and place the chicken breast on the sheet, in between the vetables, making sure the chicken touches the pan (don't place them on top of the vegetables). I had too many vegetables so I moved half to a separate tray after adding the chicken.
    7. Place the pan back in the oven and roast for another 20 minutes, or until your chicken is fully cooked. I use a meat thermometer to make sure it has cooked properly.
    8. Serve hot, with a green side salad. I love kale salad with cranberry and sesame seeds.
